Sourdough Discard Coffee Cake

Make the streusel topping by mixing flour, brown sugar, and cinnamon in melted butter.

Cream together the softened butter and sugar, then mix in the rest of the wet ingredients really well.

Fold the dry ingredients into the wet mixture until no dry streaks remain.

Pour half of the cake batter into a parchment-lined 9x9-inch pan.

Sprinkle about 1/3 of the streusel topping over the batter.

Drop spoonfuls of the remaining batter over the streusel layer and gently spread with a spatula.

Sprinkle on the remaining streusel and bake at 350°F until a toothpick comes out clean!
