Lemon Zucchini Muffins


Moist lemon zucchini muffins are easy to make in about 30 minutes!

Gather your ingredients.

Step 1:

Whisk together the flour, baking powder, baking soda, and salt.

Step 2:

Combine the eggs, vegetable oil, lemon kefir (or buttermilk), sugar, lemon zest, vanilla extract, and shredded zucchini.

Step 3:

Fold the wet ingredients into the dry ingredients.

Step 4:

Fill muffin liners with batter and bake!

Step 5:

If you'd like to top the muffins with lemon glaze, mix together the powdered sugar, lemon zest, lemon juice, and milk.

Step 6:

Once the lemon zucchini muffins have cooled, drizzle or dip the tops in icing.
