Gather your ingredients.

Step 1:

Combine sugars, canola oil, lemon zest, egg, vanilla extract & sour cream.

Step 2:

Sift & mix in the flour, baking powder, baking soda, salt and cardamom.

Step 3:

Fold the grated zucchini into the cupcake batter.

Step 4:

Fill 12 cupcake liners and bake at 350°F for about 20 minutes.

Step 5:

Mix together softened cream cheese, butter, lemon zest and powdered sugar.

Step 6:

Pipe frosting on cooled cupcakes. I used a large closed-star piping tip!
