Gather your ingredients.

Step 1:

Whisk together the flour, cornstarch, baking powder & salt.

Step 2:

Cream together the butter, sugar, lemon zest, eggs, & vanilla extract.

Step 3:

Mix the dry ingredients & kefir into the wet ingredients.

Step 4:

Fill 12 cupcake liners and bake at 350°F for about 18 minutes.

Step 5:

Cut out and fill the cupcake centers with chopped, lightly sweetened strawberries.

Step 6:

Pipe lemon strawberry buttercream on the cupcakes. I used a large star piping tip!
