Gather your ingredients.

Step 1:

Cream together the butter, sugars, and extracts really well.

Step 2:

Mix in the flour and salt until the dough is combined, yet crumbly.

Step 3:

Press the cookie dough into the bottom of muffin liners.

Step 4:

Spread a teaspoon of raspberry jam over the dough.

Step 5:

Sprinkle shortbread cookie dough crumbs over the raspberry filling.

Step 6:

Bake at 350°F just until the tops and edges begin to tan (15-20 minutes).
