Lucky Charms Cookies

Mixer with paddle attachment, hand mixer, or wooden spoon
Measuring Cups or Scale
cup (1½ sticks/170g)
light brown sugar
Lucky Charms marshmallows
for rolling (optional)
Preheat oven to 325°F and line a baking sheet with parchment paper.
Cream together the butter and sugars until light and fluffy (~3 minutes). Then, add the egg and vanilla and mix until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually mix the dry ingredients into the wet ingredients until just a few streaks of flour remain visible.
Stir in the marshmallows just until incorporated.
Roll the dough into 2 inch balls and roll them into the sprinkles.
Bake for 10-14 minutes or until lightly golden. Allow the cookies to cool for a few minutes and then transfer them to a cooling rack.
Store cookies in an airtight container at room temperature for up to 1 week. To keep them extra fresh, put a small slice of bread in the container with them!
