Lucky Charms Cookies

  • ¾ cup (1½ sticks/170g) unsalted butter room temperature
  • ½ cup (100g) light brown sugar packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg room temperature
  • teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (20g) Lucky Charms marshmallows
  • ½ cup rainbow sprinkles for rolling (optional)


  • Preheat oven to 325°F and line a baking sheet with parchment paper.
  • Cream together the butter and sugars until light and fluffy (~3 minutes). Then, add the egg and vanilla and mix until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just a few streaks of flour remain visible.
  • Stir in the marshmallows just until incorporated.
  • Roll the dough into 2 inch balls and roll them into the sprinkles.
  • Bake for 10-14 minutes or until lightly golden. Allow the cookies to cool for a few minutes and then transfer them to a cooling rack.


Store cookies in an airtight container at room temperature for up to 1 week. To keep them extra fresh, put a small slice of bread in the container with them!
