Oatmeal Pumpkin Cheesecake Cookies!

They look like normal oatmeal pumpkin cookies but they're filled with a delicious cheesecake surprise!

Gather your ingredients

Start off by blotting some of the moisture out of the pumpkin puree.

Whisk together the flour, baking soda, salt, cinnamon, pumpkin pie spice and rolled oats.

Cream together the wet ingredients and then slowly stir in the flour mixture. Let the dough chill for 1 hour.

While the dough's chilling, make the cheesecake filling by mixing together the cream cheese & powdered sugar.

Form cheesecake balls & freeze for 15 minutes. Wrap cookie dough around the filling and bake!
