Step 1

Make the crepe batter by blending the milk, eggs, melted butter, vanilla extract, flour, sugar and salt until smooth. Chill while making the cheesecake filling.

Whip the cold heavy whipping cream with a hand mixer or whisk until it reaches stiff peaks.

Mix together the cream cheese, sour cream, sugar and vanilla extract until smooth.

Gently fold the whipped cream into the cream cheese mixture just until combined.

Optional: Distribute the crepe batter into bowls and whisk in food coloring to achieve your color preferences.

Cook the crepe batter on a lightly greased 8 inch nonstick skillet for about 30-45 seconds on each side. Makes about 12 crepes.

Layer the cooled crepes with the cream cheese filling and sliced strawberries. Recommended: let the assembled cake chill for at least an hour.
