2-Ingredient Chia Pudding (High Fiber, High Protein)
Want a tasty way to get 12.5 grams of protein and 10 grams of fiber in your day? This chia pudding is the answer! Make it ahead of time in just 5 minutes with only 2 ingredients!

Instructions
Add the kefir and chia seeds to an empty jar or container with a lid (10oz or bigger).
Stir well, let it sit for about a minute, then stir again to break up any clumps.
Cover and refrigerate for at least 2 hours (until thick and the seeds have softened).
Add any toppings you'd like right before eating or enjoy as is!

Storage: Keep covered in the fridge for up to 5 days, and no longer than the date on your kefir bottle. Add toppings right before eating.Chia seeds: Weigh them if you can. Three tablespoons is about 30 grams, and weighing gives you a consistent texture every time.Kefir flavors: Lifeway lowfat strawberry kefir is my favorite I've tried so far! They have more flavors that can be used as well. If you use plain kefir, you might want to sweeten it with a little honey or maple syrup.Texture: Use slightly less chia seeds for a smoother pudding.
