In a medium bowl, mix together the oats, coconut, almond butter, honey, and chocolate chips really well.
1 cup old-fashioned oats, ½ cup shredded unsweetened coconut, ½ cup almond butter, 3 tablespoons honey, 2 tablespoons mini semi-sweet chocolate chips
Scoop the mixture into a small cookie scoop (about 1 tablespoon). Press it in so it forms a firm ball, and then release it onto a plate or into a storage container.Note: if they're too sticky to scoop, place the mixture in the refrigerator for 15-30 minutes.
Optional: sprinkle a little bit of flaky salt on the energy balls (just a few flakes per ball).
Store the energy balls in the refrigerator and enjoy throughout the week! You can also keep them in the freezer for a colder, firmer texture.

Storage: Store in an airtight container in the refrigerator for up to 1 week or in the freezer for 1 month.They will get a bit melty (& therefore messy) if left in warm temperatures, so I recommend enjoying them straight out of the refrigerator!
