Melt the coconut oil in a coffee mug in the microwave (about 30-60 seconds).
Mix in the honey, Lifeway Blueberry Maple Oat and vanilla extract.
Add the whole wheat flour, baking powder and salt. Stir until combined.
Gently mix in the blueberries and then sprinkle the top with demerara sugar (optional).
Microwave at full power for 1-2 minutes or until the muffin looks fully baked.The muffin will be very hot coming out of the microwave. I recommend letting it cool for a bit before enjoying!
