    Start your mornings with this warm Blueberry Muffin in a Mug! It's quick, easy, delicious and healthier than a mug cake! Only 8 ingredients are required and there are no eggs, butter or dairy in this recipe. It also doesn't require an oven. All you need to do for this blueberry mug muffin is mix the ingredients together and heat it in the microwave for less than 2 minutes! It's perfect for those mornings where you need a fast breakfast that's packed with nutrients and will keep you full for hours.

    It doesn't have to be blueberry season to enjoy this recipe. This mug muffin can be made with frozen or fresh blueberries! There's an extra delicious blueberry flavor added from Lifeway's Blueberry Maple Oat. It's made with organic oats and is plant based, gluten-free and dairy free! Your gut will love its vegan probiotic cultures, too!

    I love making single serve treats in mugs! I have too many mugs in my cupboard but they're all special to me, so I'm always excited to use more of them!     Ingredients

    Ingredients needed to make a blueberry mug muffin.
    • Whole wheat flour
    • Baking powder
    • Salt
    • Fresh or frozen blueberries
    • Coconut oil
    • Honey
    • Lifeway Blueberry Maple Oat
    • Vanilla extract
    • Demerara sugar (turbinado sugar) - optional

    Equipment

    All you need to make this recipe is a mug, measuring spoons and a fork or spoon to mix and eat it with! This muffin works best in a 14-16 ounce mug. One as small as 10 ounces will work (such as the mug pictured), but it may overflow in the microwave.

    Step by Step Instructions

    Step by step instructions showing how to make a blueberry muffin in a mug.

    STEP ONE (Picture 1 above) - In a coffee mug, melt the coconut oil and then stir in the honey, vanilla extract and Lifeway Blueberry Maple Oat.

    STEP TWO (Picture 2 above) - Stir in the whole wheat flour, baking powder and tiny pinch of salt. The batter will be slightly thick. Gently stir in the blueberries.

    STEP THREE (Picture 3 above) - Sprinkle a little demerara sugar on top and then microwave it for about a minute and a half.

    TIP: This muffin will be very hot when you take it out of the microwave. Let it cool for a bit before digging in!

    Substitutions & Variations

    The whole wheat flour can be substituted in a 1:1 ratio by regular all purpose flour.

    The honey can be replaced by pure maple syrup.

    Feel free to use a different kind of berry! You could use raspberries, blackberries or chop up some strawberries, etc.

    • 16 fl oz mug*
    • Measuring spoons

    Ingredients
      

    • 2 tablespoons coconut oil
    • 2 tablespoons honey
    • 3 tablespoons Lifeway Blueberry Maple Oat
    • ¼ teaspoon vanilla extract
    • ⅓ cup whole wheat flour
    • ¼ teaspoon baking powder
    • tiny pinch salt
    • ¼ cup blueberries fresh or frozen
    • ½ teaspoon demerara sugar (turbinado sugar) optional

    Instructions
     

    • Melt the coconut oil in a coffee mug in the microwave (about 30-60 seconds).
    • Mix in the honey, Lifeway Blueberry Maple Oat and vanilla extract.
    • Add the whole wheat flour, baking powder and salt. Stir until combined.
    • Gently mix in the blueberries and then sprinkle the top with demerara sugar (optional).
    • Microwave at full power for 1-2 minutes or until the muffin looks fully baked.
      The muffin will be very hot coming out of the microwave. I recommend letting it cool for a bit before enjoying!

    *This recipe works best in a 16 fluid ounce mug. It can be made in as small as a 10 fluid ounce mug, but be careful while microwaving it as it may overflow.
