Thaw the sheet of puff pastry according to the package's instructions.
Preheat oven to 395°F and line a baking sheet with parchment paper.
Mix together the farmer cheese, powdered sugar, and vanilla extract really well.
Using a rolling pin, gently roll out the pastry sheet to about 9x11 inches on top of the parchment paper.Cut it into 6 equal rectangles and spread them out so they're about 2 inches apart.Lightly score smaller rectangles about ¼ inch inside of each pastry (do not cut all the way through).
Spread cheese filling over the inner rectangles and then top with a single layer of blueberries.
Stir the egg in a small bowl and then brush it over the outer edges of the pastries.
Bake on the middle rack until the edges are golden (about 15-20 minutes).
Let them cool for 5-10 minutes. Sprinkle with extra powdered sugar and enjoy!
