- Powdered sugar and vanilla extract add sweetness to the danish filling.
- You can use milk or kefir in the cheese filling. Whichever you have on hand will work well!

Substitutions & Variations
- If you prefer to make everything from scratch, try this rough puff pastry recipe!
- Substitute whatever fruit is in season or you have on hand in place of the blueberries. Try other fresh berries, sliced peaches or plums, mango, or a combination of many!
- If you can't find farmer cheese, use an equal amount of room temperature cream cheese instead.
- Add icing to the cooled pastries for added sweetness.
- Braid the puff pastry over the filling like in my Easy Braided Almond Danish Pastry.

How to Make Blueberry Danishes
Before starting, thaw the frozen puff pastry sheet according to the package instructions. Make sure it thaws enough before unfolding it so it doesn't break apart or create holes in the dough.
Step 1: In a medium bowl, mix together the farmer cheese, powdered sugar, vanilla extract, and milk or kefir until smooth.
Step 2: Gently roll out the puff pastry sheet on top of a baking sheet lined with parchment paper using a rolling pin. Cut it into 6 equal rectangles and score a smaller rectangle inside of each one, leaving a border around the edge.
Step 3: Spread the filling over the inner rectangles and top with a single layer of blueberries.
Step 4: Brush egg wash over the edges of the puff pastry and bake at 395ยฐF until golden and puffed (about 15-20 minutes).
When you're ready to eat, sprinkle the warm blueberry danishes with powdered sugar. Enjoy!
Expert Baking Tips
- Let the cheese soften to room temperature and preheat the oven while the pastry thaws.
- Be gentle when rolling out the pastry sheet. I only do this a little bit so it ends up at about 9x11 inches.
- Don't forget to score the pastries so the edges can rise. I use a pastry wheel to cut and score the sheet.

Easy Blueberry Cheese Puff Pastry

Ingredients
- 1 sheet puff pastry store-bought or homemade
- 4 ounces (113.4 g) Lifeway Farmer Cheese room temperature
- 1 tablespoon (8 g) powdered sugar
- ยผ teaspoon vanilla extract
- ยฝ cup blueberries
- 1 large egg
Instructions
- Thaw the sheet of puff pastry according to the package's instructions.
- Preheat oven to 395ยฐF and line a baking sheet with parchment paper.
- Mix together the farmer cheese, powdered sugar, and vanilla extract really well.
- Using a rolling pin, gently roll out the pastry sheet to about 9x11 inches on top of the parchment paper.Cut it into 6 equal rectangles and spread them out so they're about 2 inches apart.Lightly score smaller rectangles about ยผ inch inside of each pastry (do not cut all the way through).
- Spread cheese filling over the inner rectangles and then top with a single layer of blueberries.
- Stir the egg in a small bowl and then brush it over the outer edges of the pastries.
- Bake on the middle rack until the edges are golden (about 15-20 minutes).
- Let them cool for 5-10 minutes. Sprinkle with extra powdered sugar and enjoy!
